Chelating agent used as preservative and antioxidant in food and pharmaceutical products. E385 (calcium disodium EDTA) permitted in certain foods. Calcium disodium form preferred to avoid calcium depletion. FDA-approved preservative.

Calcium depletion: disodium EDTA chelates calcium — prefer calcium disodium EDTA form. High-dose IV chelation: dangerous (cardiac arrest risk) — unrelated to food preservative use. At food preservative quantities: calcium disodium EDTA very safe. Reduces mineral absorption (chelation) — take separately from mineral supplements.
