About

Calcium salt of propionic acid used as mould and rope inhibitor in baked goods. E282. GRAS. Metabolised as propionic acid (normal fermentation product). Some studies suggest effect on child behaviour at high doses.

Generally safe. A small Australian RCT (Hunne et al.) suggested irritability and restlessness in some children at high doses — requires confirmation. ADHD: some practitioner advice to avoid, though evidence is limited. Very safe at typical preservative quantities.
